"Miss Fogarty’s Christmas Cake" was published in the USA in 1883, when it was credited to Charles Frank Horn as composer of both tune and words. Horn, a prolific writer of popular songs, was born in Pennsylvania in 1853, and though I have found no evidence that he possessed Irish blood, his lyrics often poked fun at the Irish, displaying ‘Oirish’ spellings and sentiments.
